Sweet Treats for Mother’s Day

It’s hard to believe it is May already, and with this month comes the most special of celebrations; Mother’s Day.
For most of us this involves a heartfelt card, perhaps some flowers, a special lunch out or maybe even breakfast in bed.

Food is such an integral part of the holidays and celebrations in our lives as it unites us. Sitting around a table or on a picnic blanket brings us together with the people we love and trust. Even the smell of food has the ability to rekindle long-forgotten memories.

One of those memories might be from your childhood and the food your Mum used to make; whether it was after-school snacks, wholesome family dinners or a signature dessert.

This Sunday, treat your Mum to something sweet and create some new treasured memories. Here are a couple of ideas to create some lovingly home-cooked goodness for your Mum using the very best that Mother Earth has to offer.

A Healthy Twist on Delicious Chocolate Mousse

This recipe, developed by Kelly Gibney from food blog Bonnie Delicious, is sure to get lips licking! Kelly is a regular food writer for magazines such as Dish, Fashion Quarterly, Homestyle and Little Treasures. She also has a new cookbook called ‘Wholehearted”.

This combination of cacao and orange adds a beautiful twist to a regular chia pudding and decorated with fruit, edible flowers or bee pollen, it looks as good as it tastes!

HOW TO

  1. Pop all the ingredients (except orange zest) into a blender and blitz it until smooth.
  2. Add orange zest at the last minute and very briefly pulse through.
  3. Place in the fridge for at least an hour to chill and firm up. It will last up to 4 days (if you can keep your hands off it!) in an airtight container in the fridge; that is if you can keep your hands off it!

Five Ingredient Healthy Russian Fudge

This delicious Healthy Russian Fudge is melt-in-your-mouth good. Made with five simple ingredients and no blenders required, it’s the perfect no-guilt indulgence! If you loved fudge as a kid and Mum made it for you, this is sure to take you right back to your childhood!

  • 2 cups hulled tahini (softened)
  • 3 tbsp BioBalance coconut oil (melted) (+ optional 1 tbsp cacao butter, melted)
  • 3 tbsp brown rice syrup
  • 1 1/2 tsp vanilla extract
  • 1/4 tsp sea salt

Toppings (optional)

  • Freeze dried berries
  • Goji berries
  • Sesame seeds
  • Edible flowers
  • Flaked sea salt

cup = 250ml cup        tbsp = 15ml tablespoon        tsp = 5ml teaspoon

HOW TO

  1. Mix all ingredients in a bowl until combined. If your tahini is particularly hard (i.e. has been in the fridge), you may want to soften/warm it slightly before starting so it will mix well and become super smooth.
  2. Pour your blend into ice cube trays, and place in the freezer for around an hour or until set.
  3. Remove from the moulds, sprinkle with toppings if desired, and devour immediately (before they melt!). Or store in the freezer in a sealed container for up to two months (although we promise you, these won't last more than two days...).
