What's in Season? Feijoa and Passionfruit

The colder months are upon us, and although it may be grey outside, that doesn’t mean you can’t enjoy the bright delicious flavours of feijoa and passionfruit.

Feijoa has a very distinctive taste – often described as a mix of pineapple, guava and strawberry. Containing dietary fibre and a good source of vitamin C, this unique little fruit packs a perfect punch in flavour and nutrients.

Passionfruit, with its beautiful bright colours of purple and yellow, not only make it appealing to the eye, but also the taste buds. A good source of dietary fibre, they are also a source of vitamins C and E.

These unique fruits are now in season, so it is the perfect time to whip up some scrumptious desserts that will make you forget about the weather outside!!

Feijoa Cake with Lemon Passionfruit Drizzle

Serves: 8 to 10 | Preparation: 20 minutes | Cooking: 30 minutes


Ingredients
  • 6 feijoas, peeled and halved
  • 1 banana, mashed
  • ¾ cup wholemeal flour
  • 1 teaspoon baking powder
  • 2 eggs
  • 100g butter, softened
  • ½ cup desiccated coconut
  • ½ caster sugar
  • Passionfruit syrup
  • Flesh of 4 passionfruit
  • Juice of 3 lemons
  • ¼ cup caster sugar

Method

1. Preheat oven to 170°C

2. Grease and line a medium sized slice tin (about 16cm)

3. Beat the butter and sugar in a bowl until pale and creamy. Then beat in the eggs, banana and stir in the coconut, sifted flour and baking powder

4. Spread evenly into tin and press in the feijoas (sliced side up as per photo)

5. Bake for 30 minutes or until skewer comes out clean

6. To make syrup, heat the lemon juice and sugar in a saucepan until boiling and stir until sugar is dissolved. Simmer for 3 to 5 minutes or until thickened to syrup, remove from heat and add passionfruit and stir through

7. Once cake has cooled take out of the tin and drizzle syrup on top


Feijoa, Apple and Rhubarb Crumble

Serves: 6 | Preparation: 15 minutes | Cooking: 20-30 minutes


Ingredients
  • 6 feijoas, peeled and chopped
  • 8 stalks of rhubarb
  • 4 granny smith apples, peeled, cored and sliced
  • 25g of butter
  • 1/3 cup of brown sugar
  • 1 cup flour
  • ½ teaspoon ground ginger
  • ½ teaspoon cinnamon

Method

1. Preheat oven to 180°C

2. Simmer rhubarb and apples for a few minutes until just tender

3. Mix raw feijoas with cooked apples and rhubarb with cinnamon and ginger

4. Place fruit in the bottom of a lightly greased baking dish

5. In a bowl combine the flour, butter and sugar and rub together with your fingers to make crumble

6. Sprinkle mixture over fruit in baking dish

7. Bake until topping looks golden and crunchy (about 20 to 30 minutes)

8. Serve with vanilla ice cream
