Chia – The Nutritional Super Seed!

Great things come in small packages, and the chia seed is one of them!
These tiny seeds pack a powerful nutritional punch, loaded with fibre, protein, plant-based omega-3 fatty acids, and plenty of antioxidants.

Seeds might not sound all that appetising or filling, but with the right ingredients, you can transform them into something delicious – even desserts!

Danijela from Healthy Always shows us how you can whip up something tasty and healthy in minutes!

This recipe for easy chia puddings is just as delicious as a nutritious breakfast as it is a decadent evening dessert.

When chia seeds are combined with a liquid they swell up to around 10-12 times their weight, to form a thick pudding-like consistency.

Chia pudding is great served alongside fresh fruit, chopped nuts or muesli – totally yummy!

My favourite thing about this recipe is how quick and easy it is to prepare. Simply pop all of the ingredients into a jar, give it a good shake and then let it sit in your fridge to thicken. Living healthy certainly doesn’t need to be tricky or time consuming – within minutes all the prep work for this pudding is done!

Chia Pudding

Ingredients

2/3 cup chia seeds

2 cups of milk (e.g. dairy, almond, rice)

1 tsp pure vanilla essence

1 tsp to 1 Tbsp pure maple syrup, to sweeten

Method

1. Add all ingredients into a large mason jar and firmly screw on the lid. Give the jar a few good shakes to mix everything together.

2. Leave in the fridge for a few hours to thicken.

3. After a few hours the pudding should have thickened up nicely - feel free to add a little extra milk to loosen it up and make it more of a pudding consistency if it’s a little stiff. Spoon into a bowl and serve with fruit, yoghurt or muesli.
