What's in Season? Sensational Summer Salads

When we think of summer, we think of long days, delicious fresh fruit and vegetables at the ready and of course, the classic New Zealand BBQ!

Simple, delicious and a little bit fancy – that is the mantra of summer food! As such, there are so many succulent fruit and vegetables at the ready that when combined, they are a match made in heaven – not only because they’re tasty but good for you too.

This Fresh Strawberry Salad from the 5+ A Day Charitable Trust is sure to impress even the most discerning of those about fruit in salads. Not only is this dish a tasty component to your next BBQ, but is packed with plenty of good stuff!

This delicious salad uses oranges which are a good source of vitamin C, strawberries which are a source of folate, fibre and niacin, as well as containing potassium, and walnuts which are rich in omega 3.

Fresh Strawberry Salad

Serves: 4

Ingredients

1 1/2 cups strawberries, hulled and sliced
6 cups mixed green lettuce or fresh spinach
1 orange, peeled and separated into segments
1/4 cup walnuts
1/4 cup cranberries
1/4 cup feta cheese, crumbled

Dressing

Juice of 1 lemon
2 teaspoons dijon mustard
2 tablespoons honey
2 tablespoons olive oil
Pinch of salt

Method

In a large bowl, toss together the strawberries, lettuce, orange, walnuts, cranberries and feta cheese.

Combine the dressing ingredients and drizzle over the salad. Place in the fridge for 30 minutes before serving.
