Mitsubishi Electric has developed a new technology, Vitalight, to increase the vitamin content of vegetables with the ultimate aim of keeping food fresher for longer. Energy efficient amber LED lights at the back of the vegetable case mimics photosynthesis and creates chlorophyll in vegetables, allowing them to absorb energy from the light, increasing Vitamin C levels for fresher, tastier food.
